Easy and Healthy Homemade Salad Dressing

If you’ve been anywhere in the vicinity of this blog the past few weeks then you know I am on a health kick. We’ve been eating a lot of salads in the W household of late, which is awesome for me since it’s literally one of my favorite foods. And somehow, I’ve managed to get B on the salad-loving bandwagon too (snaps for me!).

Now that I track my calories, I have learned just how much salad you can eat! Did you know that a whole cucumber has only about 30 calories?! Let’s just say you get a lot of bang for your buck. You can, however, blow the whole deal in a hot second with the wrong salad dressing (I’m looking at you Buttermilk Ranch).

I’ve started making my own dressing to ensure that I know exactly what’s going into it and how many calories it contains. One of the worst things you can do is get some artificial-chemical-filled-low-fat-BS-dressing. This is basically empty calories that have no nutritional value (would you hook yourself up to an IV of weirdly named chemicals? No, so stay away from artificially altered fat-free foods).

Here’s what I do…

Lately I’ve been adding black bean burgers to my salad, so my dressing has a bit of a Latin twist…

{Start with an extra virgin olive oil base, measure out one tablespoon into a small glass bowl}

{Add two spoonfuls of fresh salsa and cilantro base*, add a few dashes of Adobo Seasoning and Chili Powder}

{Mix well and drizzle over salad}

{Toss and enjoy!}

This makes two servings. Each serving is only 70 calories, and full of nutritional value!

Looking for something more Mediterranean? Add lemon juice, chopped garlic, sea salt, and pepper to your olive oil.

Want something super, duper easy? Simply add balsamic vinegar to your olive oil.

*fresh cilantro is great too!
